Interview with Leonard Lopate
Since leaving the 9-to-5 world, I can often be found from noon to 2 PM in my tiny kitchen, defrosting some lentil soup for lunch and listening to the Leonard Lopate Show on my favorite radio station, WNYC. On Tuesday, Sept. 8, I was honored to be a guest on the show. Here’s a very quick and healthy (no oil or butter) one: Throw lentils into a pot with some sliced carrots, celery and onions (or whatever you have lying around the fridge) and add spices. I sometimes use a Moroccan spice mixture that I bought in Marrakesh, or I make an Italian version with oregano, basil and fresh parsley.
In the summer, I like to make a lentil salad with feta cheese, mint and lots of olive oil.
